I have even experimenting with the spelt
cereal in our pancakes and other baked
goods...nice nutty texture! This morning I
tried it as a "cream of wheat" type cereal.
It was delightful. Even one if my fussy
eaters is enjoying it! I cannot wait to try
it on my other particular eaters.

I made any number of mistakes making
the bread because I hadn't made whole wheat bread in ages
and still the results with your (sprouted) flour were
amazing. The crumb is practically perfect, which I can't
understand because of my goof ups, and the texture is so
light, which makes no sense because the loaves didn't rise
enough (I goofed the first rise). I'm floored! And the
flavor is outstanding, slightly sweet, nutty. Wow.

I have to tell you how much I love your flour! Baking is my
least favorite kitchen activity, so I’ve only made a few things
so far (biscuits, pancakes, and pie crust), but everything I’ve
made has been delicious! More people need to know about this.
Yes, it’s expensive, but it is so worth it! It is great to be
able to have all the benefits of white flour without the health
detriments! Your flour is so easy to use and the taste is
amazing; great wheat flavor without the typical whole wheat
flour heaviness and grittiness. I was making the pie crust last
night that finally jarred me into writing. I couldn’t believe
that I had actually made a whole wheat pie crust that tasted so

Just wanted to drop a note to say THANK YOU for the wonderful bounty
that graced our kitchen this past week. The granolas were
outstanding ! Subtle, crunchy and flavorful. I've never understood
what was meant by " soaked cereals " but it is abundantly clear upon
first taste that it really adds to the quality in many, many ways. I
can hardly wait to try the new Banana Muffin granola ! The flour was
another delightful surprise. The pancakes got rave reviews and I
tried it in Apple Cake and it added that WOW factor. The REAL treat
from our order were the nuts ! Makes me wonder if we'll ever be able
to eat regular " mixed nuts " again. Really sensational.
